Wayland Brewing Company Review – Orchard Park, NY

Wayland Brewing Company is on North Buffalo Street in Orchard Park, just outside of Buffalo. This time Joe went Detroit style.
The order
Joe ordered a cheese pepperoni Detroit style pizza online for $20.66. He wasn't sure if a large was an option, and he guessed this one was four slices. One early critique: the pepperoni looked a little light in spots.
First bite
It looked fantastic out of the box, and Joe made the easy call to grab a corner slice. The first bite was sweet and delicious, and the cheese crown bite was even better. Joe had a Detroit style pizza in Nashville not long ago that missed exactly this.
Crust, sauce, cheese and toppings
- Crust: Thicker, as Detroit style is, with a buttery flavor. Medium browning underneath, leaning toward the darker side, which Joe liked. He points out that a lot of people call this deep dish, but that's Chicago style.
- Sauce: Sweet and delicious, but Joe felt the pizza could use a bit more of it.
- Cheese: Solid, and the cheese crown is a beautiful thing.
- Pepperoni: Cupped up nicely, but missing a little depth of flavor.
What would make it better
A little more sauce and maybe a different pepperoni with more flavor would push this into the nines.
The verdict
Joe called it a good, solid pizza and gave it an 8.9. He says it would be perfect at the brewery with some craft beers, so you can soak it up and keep drinking. Props to them.
