Carbone's Pizzeria Review – Alden, NY
score
Carbone's is on Broadway in Alden. Joe brought a special guest for this one, Matt, the owner of Buffalo Deep Dish and one of Joe's favorite pizza makers in Buffalo.
The order
They got a large 17-inch cheese pepperoni for $18.92. The pepperoni looks like it's sliced fresh, with a little bit of snow on top.
First bite
Both called it a solid pie right away. It's a little thinner than a lot of Buffalo pizza, and the pepperoni is extra greasy. It's nicely cooked underneath with great browning.
Crust, sauce, cheese and toppings
- Crust: Thinner for Buffalo, with some crisp on the back. Joe compared the crispy edges to the cheese crown on a Detroit style.
- Sauce: Joe really liked it. Nice tomato flavor. Matt says it's a red pack sauce.
- Cheese: Money. Matt says it's Galbani, and that Buffalo cheese has more fat in it.
- Pepperoni: Shining through, extra greasy.
What would make it better
Even though it's cooked nicely, a little more cook would have pushed it higher for Joe.
The white pizza with Matt
Matt ordered the second pie, a large 17-inch white pizza with sausage, onion and jalapeno for $24.90. They wanted cherry peppers, but none were available. The sausage is real bulk sausage broken up, not frozen pellets, and the pickled jalapenos bring vinegar and spice. The slices are cut a little thinner, which helps since it's heavy. Both thought the cook was even better on this one, and Joe liked it more than the cheese pepperoni.
The verdict
Matt went 8.9 and Joe gave it an 8.7. A phenomenal pie, and the white pizza Matt picked scored even higher.
Ranking note: Best Pizza Buffalo ranks every pizzeria by Joe’s score for a standard pizza, so Carbone's Pizzeria is listed at 8.7.
